AM~Erica Served Up Blueberries

So anyway...

For some reason, I've had my grandmother on my mind lately. Not good, not bad...just present.

Then I got in a conversation with someone who brought up a song that made them think of their grandmother. It was a heartfelt conversation remembering our grandmothers.

It hasn't been a year, yet, since my grandmother passed. And Mother's Day is approaching quickly, which will make it my very first Mother's Day without a grandmother.

Not that I'm fond of the holiday, or those like it (reminder HERE), but it is still wholly prevalent. No real way around that fact.

Recently, I did set up a memory table for her. It's not much, but just enough.




I wanted to carry it over from the memory tree I did for her at Christmas. (reminder HERE)

So she is always there....but just strong on my mind in the last few days.

It's that time of year. Some berries are coming into harvesting time! So I'm trying to pick some up at the store.

Several years ago, while we were living in St. Louis, we took one of our far-too-few trips to the Soulard farmer's market, we came across a year of an overabundance of blueberries in season! We purchased a 5 pound box of blueberries for $3! What a deal!!

Since then, the blueberries have not been in such overabundance, and the prices on them have not been so thrifty. We are paying as much or more for a pint of blueberries than we paid that day at Soulard.

Now with some of my price matching & non-extreme couponing I do, I did find blueberries on decent sale, as opposed to what they have been going for. So I made sure to purchase some.

It's time for standardized testing around here (whole other subject I will not touch here), and so I've been trying to prepare the boys the best I can. So, I've read that eggs can help brains on test days, as well as berries. Blueberries are supposed to be great! They have earned the nickname of "brain berries" for that reason.

So, I've been fixing them scrambled eggs on test days....and I almost forgot we had the blueberries!

This morning, Lil Guy had testing to prepare for. He asks for green eggs (like I make on Dr. Seuss' birthday, HERE). They are cheesy scrambled eggs with bacon bits, salt & pepper, and some parsley - they are, then, colored a bit o'green, whisked & then cooked up.

While the eggs were frying up, I happened to remember the berries. I pulled them out wondering if he'd remember...

It's been quite a while, you know. The last time some blueberries had been pulled out of the freezer for him. Maybe about 3-ish years or so. And I really didn't know how...or even if...he'd react.

I placed the berries on the side of the scrambled cheesy green eggs onto the table for his breakfast. He came out, sat down & began to consume the edibles. But he didn't even react...

...until...

...I heard Lil Guy turn his voice to me to say, "Hey, mom! Do you remember when we would be at Gigi's? Not the nursing home, but her house before that? She would pull out blueberries when we'd go? Remember that?"

He was very matter-of-fact about his questions, and there I was trying to choke back tears while smiling that he remembered.

When he was very little, he went snooping in her kitchen (because he was way too smart for his own good) and discovered blueberries in the freezer & decided to start eating them. My grandmother was so tickled by it, she always made sure to keep blueberries in her freezer for when we would come by...in case he was looking for blueberries.



I don't think he realized how the blueberries got started, but I'm so glad just having those berries on his plate, really to help his brain on test day, would make him think of his Gigi.

AM~Erica Sees Why Most Give Up

So anyway...

It's January...amm-i-rite?

We just got into a new year...amm-i-rite?

Even though I'm not one to make resolutions (read more about that HERE), a lot of people do. And a lot of the resolutions have to do with getting healthier, eating better, exercising more, etc. Amm-i-rite?

I'm huge on sales & coupons. If I can price match a few items AND have coupons, that's something that makes my day! It's near nirvana when I have a coupon to use WITH some price match! Save the money, get the stuff. That's how we gotta try to make our dollar stretch while feeding kiddos at home. Know-whaddi-mean?

We pick up a Sunday paper to get the sales ads & coupons. And my hubby & I go thru them to pull out the necessary ads along with the coupon booklets to see what we might be able to save some money on. Once in a while, one of two things happen:

A. There are no coupons to go through that week - a total downer & week ruiner

II. Up to 2 weeks before a big holiday, there is a crazy number of coupons to go thru - week maker

At the turn of the new year, or leading up to it, there are usually about 4-5 coupon booklets chalk-full of whole grain, gluten-free, high fiber, low calorie, fat free foods & drinks, along with vitamins that are right in front of you to encourage you to eat better & attempts to help out your try (again) at living a healthier lifestyle. Save money doing what you resolved to do for the new year!

I made a joke that The Onion should totally have an article about how some poor extreme couponer must now have to give up her chips, soda pop & Twinkies because the coupons have only allowed her to live a dreadfully healthy lifestyle for the new year! If it was done in true Onion style...it would be hilarious!

But what happens in the meantime? Anywhere from 3-6 weeks from starting your new lifestyle, cold turkey, many give up. I always found that interesting, but I think I found a culprit that lends to a multi-layered waterfall of reasons!

A month into the new year, there's another huge event that takes place. It's months in the making & everyone finds out how into the event they will invest themselves depending what it comes down to about 2 weeks before the event. And even if you are invested in it or not, many will still gather for the event with get togethers galore!

About a week before this huge event, the Sunday papers are once again chalk-full of 4-5 slicky booklets of savings! However, these won't contain your fat-free, low-cal much of anything! Instead, you will find where you can save some money on potato & tortilla chips, dips, guacamole, pizza, pizza bites, hot dogs, fried chicken tenders, cheese, salsa, Velveeta, Rotel, M&Ms, "fun size" candy bars, Oreos, 2-liter soda pop, beer...you get the idea...takes those places.

Why?

It's only the 2nd biggest food day, only after Thanksgiving, that gathers such attention...

We prep for the Super Bowl. And when we host or go to a gathering, we plan on eating all the things! And it's so delicious consuming all the things...

Think about it for a moment...
About when do the healthy lifestyle resolutions tend to waiver?

Coincidence? I'm thinking not...
And when you don't get coupons, sales & money savers on the good-for-you stuffs, but instead have the coupons, sales & money savers on the junk that "makes the football party"...I think there's a correlation...



It's no wonder! Look at that!!

So...are you one that tries to keep your health resolutions, take in a Super Bowl party, and then strangely find a way to fall off your healthy life style wagon? This could be your reason...

Just wanted to share this PSA with you...along with my face palm moment that it took so long to figure out...and be amazed at the sneaky-ugly marketing that happens in this short period of time.

OK...are we aware? Good luck keeping up your resolutions...

Oh...and, as much as I love me some football...I will be rooting for the commercials...again. Depending on how much I'll get to watch...but that's another post...for another time...

AM~Erica Has Layers

So anyway...

As today is consecutive snow day #2 around here, it probably shouldn't surprise you that I AM DOING A SNOW DAY POST. Amm-i-rite? You knew it was a-comin'...

But today is a bit different. Unlike I POSTED ABOUT YESTERDAY being all snowed in & such...today is less lazy. Today was what we were preparing to actually do for when we got snowed in.

Today, the boys went out in the snow! Well, I say it was the boys because hubby & Teen Boy went to try to shovel maybe about a foot of snow (OK...maybe only SLIGHTLY less) off the driveway. After the big initial snow yesterday, we did get a little bit more that afternoon & again that evening.

So, as I was trying to say before I interrupted myself was that hubby & Teen Boy went out to shovel the tall & thick snow off the driveway. Oh, and attempt a snowblower that we inherited, too. Lil Guy decided to go out, too...but to test out the snow, of course!

I prepped myself to go record some memories. Help out? No way...I'll take pictures of the hard work so we can always remember...

And we made sure we went out like "ogres"...


That's right...we had to peel off several layers...like an onion (or an ogre) so we could rewarm back up. Those layers don't keep you very warm anymore once they are coated in snow that melts...BURRRRRRR!!!

So, speaking of onions...I came on in to put on some soup. Beef & veggies (like onions) into a big pot on the stove. I ended up adding rice since we had some to use. It did turn my soup into a stew...but it was hearty & really good for a lunch greeting after being in the snow! However...it made tons! Anyone want some beef & veggie stew with rice?




No recipe yet, folks...this was a "let's throw stuff in a pot" kind of dish.

But, speaking of food, we are gonna have a nice hearty meal of chicken & noodles...which happens to be brewing up in the lazy cooker right now! I love that comfort food. Mmmmmm...
Plus...in a smaller lazy cooker, I've got some chicken tenders going so I can work on having  my Mexi-style chicken noodle soup for tomorrow! 

With still being slightly hunkered down, and all of this hearty comfort food, and being overall pretty lazy...
This is totally MY CHANCE TO BE LIKE A BEAR!!! You know...cuz I'm totally adding more of those onion-like layers anyway... (plus...awesome sleeping weather)

OK...onto the rest of the day...of movie watching, possible fire in the fireplace, antioxidant-fortified Jesus water, chocolate, hot chocolate, hot tea...maybe even coffee...
You know...in our bunker den...

Now prepping for more possibly on Monday...hope we have time to restock the bunker...in layers...like an oger...

AM~Erica Hopes to Join in the Super Bro HarBowl

So anyway...

I'm trying to get on the mend. However, I DO FEEL YUCKY-YUCK WITH THIS JUNKY-JUNK. I've decided that these next few days, I should turn this nasty strep stuff into a spectacle & call myself...

All of this came in bad timing, too. I know, I know...when does it ever? But this is for really-realz, yo!

Unless you have lived under a rock...you should know that today is Super Bowl Sunday! And this chic LOVES ME SOME FOOTBALL! (Blame my hubby.)

The last few years, we've just watched with just our family. Seriously...just the hubby, the kiddos, and moi inhaling some wings, nachos, and other tailgating fair while watching the game...well, usually just the commercials. But, if you know me, I wanted to have something bigger one of these days...

Things have been really crazy around here...more than just the sicky stuffs, too. So, we didn't get to plan a get together like I/we had hoped. However, we have a little bit of family coming over...mostly since they won't get to watch at their place. So they get to catch the event & we get to have people over! Woot! We were planning who was bringing what for quite a tailgating spread.

And then...strep happened! GRRRRRRR!!!!!!!

I am really bummed that I couldn't stay for worship last weekend since I hit an exhaustion wall with my cold...then this strep thing hit...and I am contagious until I've had antibiotics set in for 24 hours. Well, this means missing worship for the 2nd week. This bums me out to no end. Seriously. I enjoy going to church. However, I will have antibiotics set in for over 24 hours by the time guests come.

Now, I gotta be a slave driver for everyone else to clean. And a lot needs to be done! Since I've been ill for the last 2+ weeks, I couldn't get a whole lot done. *sigh*

In the meantime, I am hoping to to get to a spot that I can enjoy some of the food, watch a game between the leadership of brothers, and...the commercials!

AM~Erica Continues Cooking

So anyway...

I'm really not sure what my deal has been. And I keep bringing it up...but this is super weird for me. WEIRD!!

In the midst of NOT FEELING TOO GOOD, I decided to make some seriously healing Chicken Noodle Soup. It's pretty serious stuff!

But I get this strange thing that happens to me. I start getting inspired & stuffs...and then I can't stop! I try versions of things. It's crazy! Especially since this whole 50's HOUSEWIFE THING is so weird to me. I am not a June Cleaver type...but with Pinterest & my brainy-brain tag-teaming...things happen. Things happen that make my family laugh at me since I said I couldn't be this person.

Like, making things from scratch & coming up with recipes. Wha-WHA??? What is with this madness?

I don't know either. But it happens. And I got something worked up in me that made me want to try a slightly different version of my soup.

We really enjoy eating Mexican around here. Tacos are a staple favorite. It's one of the few things that we know everyone will eat. Nachos, enchiladas & taco mac are also big hits. I think this is about the only line of things my whole family will eat together. Seriously.

Now, even though some of my family freaks out over soup...cuz they are weird...I will have issues with them trying this new version. But...I am quite happy with it!

So...wanna try to make it, too?

Cilantro Lime Mexican Chicken Noodle Soup with Green Tea


2 lb boneless/skinless chicken breast, cooked & cubed or shredded
1/2 C lime juice
80 oz chicken broth
4 C brewed green tea (yes! Green Tea)
¼ sweet onion, chopped
2 C finely chopped spinach or kale (or other dark leafy greens)
1 – 10 oz can cilantro lime Ro-Tel
1 can black beans, drained & rinsed
1 small can whole kernel corn – no salt added, drained & rinsed
¼ bell peppers (each color – red, orange, yellow, green)
3 T ground cinnamon
¼ C cilantro
3 T parsley
3 T smoked paprika
2 T garlic powder
2 T chili powder
1 T onion powder
2 T green onion
1 bag whole wheat egg noodles


Pour lime juice, chicken broth & green tea into a large pot. Bring to a boil.

Once boiling, turn heat down to mid-hi heat. Put in the chicken into the broth.

Begin adding the vegetables plus the herbs & seasonings to the soup. Continue to let boil on mid-hi heat.

Then add the noodles. Make sure they are tender.

Begin testing the soup's broth to make sure seasonings are to your liking; adjust as necessary.

Let simmer.

Garnish with shredded cheese & tortilla chips (crushed or strips). Serve

Still quite healing...but with some kick. And yet...still comfort food.

AM~Erica Can Eat Some Interesting Stuff

So anyway...

Even though I'm STILL TRYING TO GET WELL, there's these things living in the house that think that I still need to act like a mom. *sigh* It's a good thing I love my kids...or they'd be on their own trying to find their way around the house & out the door early in the mornings. Yeah...I don't think they'd be able to do it just yet.

But, I have tried to make sure they stay healthy or get them back on the path of GETTING & STAYING WELL. They may not like it, but I do it! Cuz I'm still The Mom!

While doing Super Mom duties, Lil Guy has decided that he wants to start taking lunch to school again. He hasn't done this for quite some time, so of course he would pick a time I'm feeling all crummy to pick this back up...but it's fine...IT'S FINE!

As I was finding out what he wanted in his lunch, he told me he wanted a sandwich with ham & turkey with some [turkey] pepperoni, cheese, mayo, BBQ sauce, ketchup & lettuce. That's a good sandwich choice! So I started making it. We have shredded lettuce that I've used, so I tossed some on the sandwich when a piece dropped off the bread onto the counter. I picked it up & ate it..cuz...yum...then it triggered a memory:

*DOO-Doo-doo, DOO-Doo-doo, DOO-Doo-doo...*

Back in high school, I had some weird habits. But what teenager doesn't have weird habits? Amm-i-rite?

I do enjoy breakfast. I could eat breakfast at any point of the day. But there's something that was in my teenaged brain...you know the one with the frontal lobes shut off...that made me start digging for a different breakfast. For quite some time, I ate a sandwich for breakfast. Not a breakfast sandwich on a biscuit or English muffin with sausage & egg. Nope, not for me. Instead...I did this:

I toasted 2 slices of bread, put on some mayo, cheese & lettuce. That's it. Nothing extravagant or anything, but it was what it was. A total BLT, but minus the B...and, well, the T.

Imagine my sandwich looking something like this...but for real.

Just popping that little piece of shredded lettuce in my mouth this morning while making a sandwich with the bread, cheese & mayo involved, too, totally threw my brain back to the early 90's. Weird how we do that.

But it doesn't stop there. It was my high school brain & teenage problem solving (scary sounding...I realize this) that led me to one of my very favorite snackage that I still enjoy to this day. It's one of those things that you might need to tilt your head & squint to figure out...but don't knock it til you try it!

Brace yourselves...

It's odd & delicious...

I do love me some carrots and caramel! Seriously! I'm not kidding! I keep baby carrots on hand with some caramel sauce cups. Portion controlled deliciousness!


You might want to know where that comes from, right? I didn't just create it in my teenaged brain...remember? I said there was "problem solving" involved...

My mom taught 1st grade for close to a million years. OK, not that long...but a really long time. I know she taught several of you, too. So those of you who were ever in her class, or had another 1st grade teacher at her school, probably did a Johnny Appleseed lesson. It usually culminated with carmel apples.

I looked forward to that section ending, cuz I knew the lazy cooker would be coming home with leftover melted caramel & maybe some leftover apple slices, too. YUM-MY!

However, this one year...the lazy cooker made it back home...with only reminisces of caramel caked to the sides & bottom. *sigh* Little heathens ate it all...or some of the adults couldn't help themselves either. Barbarians, I tell ya! And there was not a single apple slice left either. I. Was. Not. Happy.

However...I did notice that my mom brought home some carrot sticks. You know...little, mini scraping rods...perfect for scraping caramel traces off the sides of a lazy cooker...

So...I picked up a carrot, reached into the inside of the lazy cooker & began to scrape off the melted caramel onto my newfound tool. After several delicious takes of it...I decided to try something...scrape the caramel & BITE it off the carrot.

You know what? It was SO good!!! So...I finished the carrot sticks AND cleaned the melted caramel from the lazy cooker. AND? I found me a new snack.

Go ahead...go try it! Seriously!

Just FYI...my kiddos love it now, too.

I'm sure I have other weird things I eat. Teen Boy makes a thing of finding the weirdest soda suicides ever...and strangely brags about it. Pretty sure Teen Girl has weird things too...we just never see them.

For a while, Lil Guy was putting mayo on his brats & hot dogs.

I know other family members who have weird food stuffs, too.
(I really don't want to discuss the potato chips with scrambled eggs & mayo thing.)

Keep in mind...there were no pregnancy cravings involved in ANY of these.

AM~Erica Makes Haricot Vert

So anyway...

After yesterday's post about feeling more & more like a 50's JUNE CLEAVER TYP HOUSEWIFE, I really have been pulling things lately that I shock & surprise myself. I have ventured (kind of) into modifying & writing some recipes. I can hear my family laughing...

A couple of years ago, Rachael Ray did an easy & elegant substitute to a green bean casserole. Whether you like her or you don't, it is a much easier & lighter version. It was green beans & sauteed onions. Then, I saw that Green Giant has a frozen vegetable side that is green beans & slivered almonds. Yummmm...almonds are my favorite edible nut. So...I figured I could combine the two ideas...

Then I got thinking: if it's a switch up to green bean casserole, then where are the mushrooms? Not everyone is a mushroom fan, I know. But that cream of mushroom soup is HEAVY, and so are the deep fried onions. So, I figured I could try to sautee some sliced mushrooms, too.

After I'd already planned on trying this, I saw where someone did a dish that was green beans & sliced mushrooms. And, for the first time ever, I heard the term "Hericot Vert" (pronounced 'harry-co vay'). Woo Hoo! Fancy-schmancy!

So, I decided I love that term with this beautiful dish...so...I present to you:

Hericot Vert Toss


Ingredients:
12 oz green beans, blanched or steamed
1/2 - 1 C sweet onion, largely diced
1/2 - 1 C mushroom, sliced
1/4 C sliced almonds, toasted
1/4 C celery stalk, diced (optional)
vegetable cooking spray

Directions:
* toast the almonds, you can do this in your skillet or in the oven; if in skillet, remove from skillet & set aside

* spray your skillet with the vegetable cooking spray, add in sliced mushrooms, diced onion & optional celery to sautee until tender

* while mushrooms, onion & celery cook, either blanch or steam your green beans

* when all is cooked thru, toss green beans, mushrooms, onions, celery & almonds all together

* Serve & enjoy!


Notice I didn't use any additional seasonings (i.e. salt, pepper, etc.). You know why? Between the toasted almonds, onion, celery (if you use it) & the fabulous green beans...why mess with it? Seriously! Oh...and...Vegans Rejoice! It's filling, too...if you eat it all at once by yourself. Not that I might know that...or...anything...

Oh, I used steamed green beans this time around.

AM~Erica Should be a Bear


So anyway...

I need to be a bear. Trust me & let me explain...

I'm not sure if you know...but we are quickly approaching the middle of November.

Where has this year gone?? And, with it being November, it's bringing on some very different & transitional things...

I've talked about it PREVIOUSLY IN A POST about decorating a Christmas tree right after Halloween. We jump right from October straight to December. However, we get some serious transition during this month.

Besides just the stores & commercials showing winter holiday stuff, the coats, scarves, gloves, hats, boots, sweaters, etc. are out in the fullest of forces. I love it! Except I'm not fond of "too cold." I love, Love, LOVE weather with lows in the 40's, highs in the 50's & 60's. Anything lower than that? BURRRRRRRRRRR!!! Too. Cold. For. Me.

Yesterday, here in KC, the highs were in the 70's, people...like, almost 80 degrees. That's so not right! But...only in the midwest...can the temp change so fast, it can make your head spin & throw your body into shock! There's a saying around here: "If you don't like the weather, hang on for 5 minutes..."
Because it's true.
And, with that said...today started out in the 60's early this morning. It rained & rained (that's good...we needed it because of the drought & Sandy wasn't in the mood to help out ISAAC around here), and the temps dropped so fast! By the time it was around 10 AM, it was in the 30's. Seriously. When we left church just after noon, there was sleet & ice on the windows. Seriously.

With temps that can be that low, it also calls for some different foods coming our way, too. And it's bracing for holiday foods coming our way, too.

Lately, we have been eating some new & different comfort foods. It's nice to change up menu stuff...but I'm already starting to feel it.

I'm putting on my layers: sweaters, scarves, jeans, tights, sweatshirts...fat layers...*face palm*

Maybe I should be like a bear. OK...sometimes my hubby (and other family members) might already agree with that...all year round...but if I'm putting on my fat layers, my fur substitute, shaving less, this should mean I can hibernate more now, right? RIGHT??

There is something that's been floating around on the interwebs for years about how I wish I was a bear:


If you're a bear, you get to hibernate.
You do nothing but sleep for six months.
I could deal with that.
Before you hibernate, you're supposed to eat yourself into a stupor.
I could deal with that, too.
If you're a mama bear, everyone knows you mean business.
You swat anyone who bothers your cubs.
If your cubs get out of line, you swat them, too. 
Your husband expects you to growl when you wake up. 
He expects you to have hairy legs and excess body fat. 
I wish I was a bear.

With all of the stuff we've been doing, eating & experiencing lately...I'm on the right track!

* Eating yourself into a stupor? CHECK!

* Swatting others who mess with my kiddos? I wish, but I've come close...year round...

* Swatting my kiddos when they are out of line? If I gotta...CHECK!

* Growling when I wake up? CHECK! Hubby expects it? Probably...but not a good thing...

* Hairy legs? OK...sometimes CHECK! But hubby isn't impressed with my "stabbin' stubblies"...

* Excess body fat? I'm apparently working on it. I'm eating a lot of substancy food stuffs. Hubby impressed? With the food, not the fat. D'oh!

* Hibernation? I so wish... With the changing of seasons, the more the kiddos are involved with & I gotta be the mommy taxi. So...this one shall remain a wish.

So I will give you my warning: every time something I wear or consume becomes thicker...I am that much closer to becoming a bear!

You've been warned. I guess I need a really, Really, REALLY long nap! Happy Holidays... (a girl can dream, right?)

AM~Erica Makes Grilled Cheese Croutons Italian Style

So anyway...

I don't do too many foody posts here, but I wanted to share this one!

About a month ago was the Ides of March. And some of you may have seen the Caesar Feast I came up with. Well, I found a slight upgrade recently to try!

It turns out that April 12th is National Grilled Cheese Day. Interesting, right? Well, I heard some trivia on April 12th that the (grilled) cheese sandwich originated in Rome. I thought about just adding grilled cheese to the Caesar Feast...but then a lightbulb went off!

Grilled Cheese Croutons for the Caesar Salad (or just a different kind of grilled cheese)!

I wandered around Pinterest to see if I could find a grilled cheese crouton-type recipe. I found out that the croutons being used for soup were simply cubed up pieces of grilled cheese sandwiches. After that, I started coming across a lot of different grilled cheese recipes for the summertime being pinned.

So, here is my Italian Grilled Cheese Croutons with Italian butter:

1. Set oven to 450 degrees F


2. Mix in a small bowl for Italian butter:
1-2 Tbsp freshly ground black pepper
2 palmfuls crushed oregano
1 palmful crushed basil
1 palmful crushed parsley flakes
1 1/2 palmful garlic powder
1 palmful grated parmesan cheese
submerge in EVOO (extra virgin olive oil)


3. Spray a baking sheet with cooking spray & then use stale bread.

4. Take a short basting brush & "paint" the Italian butter onto one side of the bread.


5. Place the "butter" side down onto the cooking sheet


6. Place 1 slice of either provolone or mozzarella cheese onto the bread. (Sargento has a provolone/mozzarella blend, so that's what I used) Only use 1 slice since you do not want croutons to be over cheesy. If you are making just a sandwich, feel free to use 2 slices.


7. Repeat step 4


8. Place on top of cheese with "butter" side up


9. Once the baking sheet has been covered (the Italian butter lasted enough for 16 slices/8 sandwiches, which just fit my baking sheet), place in the oven for 6-8 minutes

10. Pull out of the oven when the sandwiches start to appear golden brown (mine ended up a hair darker on the bottom side after 7 1/2 minutes, but they turned out fine)


11. Begin to cube the sandwiches into 16 pieces. I began with a knife, but found a pizza cutter to be much more efficient




After I cubed my 8 sandwiches, I ended up with 128 grilled cheese croutons. I tossed them in with our Caesar salad for dinner.


Isn't it beautiful? And everything was SO yummy!

These can be done on the griddle or in a skillet, too...especially if you just want the Italian Butter Grilled Cheese sandwich without cubing them.

Guess what?? I made this grilled cheese sandwich (so, two slices of cheese) & added a mini Caprese Salad to each one!


Pretty, huh? I took either a cherub or sunburst tomato, a small piece of mozzarella cheese, wrapped a basil leaf around them, skewered the combo with a toothpick & then brushed each mini salad with the Italian Butter.

So pretty, so cute...so tasty!
